Chili Dog Mac and Cheese
Chili Dog Mac and Cheese Extravaganza.

Ingredients

- 1 tablespoon of olive oil

- 1 pound of ground beef

- 1 large diced onion

- 2 generous teaspoons of kosher salt, with more for seasoning

- 3 tablespoons of chili powder

- 2 teaspoons of ground cumin

- 1 teaspoon of smoked paprika

- 1/2 teaspoon of freshly ground black pepper

- 1/8 teaspoon of ground cinnamon

- 1/8 teaspoon of cayenne pepper, to taste

- 1/2 teaspoon of dried oregano, preferably Mexican

- 4 minced garlic cloves

- 1 cup of diced green bell peppers

- 1 pound of sliced hot dogs

- 1 can (28 ounces) of crushed tomatoes (or 3 1/2 cups of tomato sauce or puree)

- 2 1/2 cups of water

- Approximately 2 cups of elbow macaroni

- 8 ounces of shredded white cheddar cheese

- 8 ounces of shredded Monterey Jack cheese

- Sliced green onions for garnish (optional)


Directions

●Step 1

Heat up olive oil in a large pot over high heat. Add ground beef and cook, breaking it up with a spoon or spatula for about 2 minutes. Add onions and salt, and cook until the beef is crumbly and the onions are translucent, about 5 minutes.


●Step 2

Incorporate the chili powder, cumin, paprika, black pepper, cinnamon, cayenne, dried oregano, and garlic. Stir and cook for about 2 minutes.


●Step 3

Add the green peppers, sliced hot dogs, crushed tomatoes, and water. Stir, bring the mixture to a simmer, then reduce the heat to medium-low. Allow it to simmer, stirring occasionally, for a minimum of 30 minutes. Taste and adjust the seasoning.


●Step 4 

Once the chili is nearly done, cook the macaroni in lightly salted water.. Cook it for 1 minute less than the package instructions suggest, about 8 to 11 minutes.


●Step 5 

While the macaroni cooks, preheat the oven to 400 degrees F (200 degrees C).


●Step 6 

Turn off the heat under the chili, drain the macaroni, and add it to the chili pot. Stir until well combined and transfer the mixture into a large, deep (15x10-inch) baking dish.


●Step 7 

Combine the Cheddar and Monterey Jack cheeses in a bowl and sprinkle about 60% of the cheese on top of the chili mixture. Use a spoon to mix the cheese thoroughly into the casserole.


●Step 8 

Distribute the remaining cheese evenly over the top and gently press it down with the tip of a spoon.


●Step 9 

Bake in the preheated oven until it's bubbly, which should take about 30 to 35 minutes. Allow it to rest for 15 minutes before serving, and optionally top with sliced green onions.
